On April 3, 1860, a model of American entrepreneurship and innovation began operations to benefit all Americans - the "Pony Express." The Pony Express mail delivery service operated between St. Joseph, Missouri and Sacramento, California from April 3, 1860 to October of 1861. The Pony Express, officially named the Central Overland California and Pikes Peak Express Company was founded by William Russell, Alexander Majors, and William Waddell. The vast, open Wild West became a path of opportunity connected by the Pony Express before the telegraph and transcontinental railroad were fully available. Amazingly, within 10 days, the Pony Express hand-delivered letters over the approximate 1700 miles between St. Joseph and Sacramento.

My favorite, and most often eaten, sandwich is celebrated today - PB&J! I didn't know it had such a high-class beginning ;) In early 1900s, it was only served in New York's high-end tea rooms. Then, in the 1920s the price of peanuts and peanut butter came down to a point where families started making them for kids' lunches. Some say the average kid has 2000 PB&J sandwiches by the time he/her graduates high school. I bet I blew past that average and had at least 4000 PB&Js! Yum-Yum!
